Beef Stew Recipe Slimming World Slow Cooker

My favourite unofficial Slimming World beef stew of all time, cooked in a slow cooker and estimated as Syn Free.

As it's my first day back at work after a week of camping, my ol' faithful came out for something wholesome and delicious.

I have almost been drawn to tears today with the amount of work I came back to, but after giving myself a few pep talks, telling myself I was ok for time, I managed it all with a few minutes to spare to share this "chuck it all in the pot" type recipe.

My slow cooker really is a busy body's best friend.  If you don't have one and you get frantic at times, then you need one in your life!

Thank heavens for stew, I say.  And more to the point, slow cookers.

Now I know it was only a couple of months since my last Scotch Broth Stew recipe but that one was thickened up with lentils and had a lot more vegetables in.  However, this one is beautiful either on the juicy side if omitting my oats and eating it like a beefy gravy with low fat chips .Oh yeah.

But it's amazing with oats that completely dissolve to naturally thicken it.

Are Oats Classed As a Tweak When Thickening Stews?

Firstly, if you're using oats as part of your allowance B, then it is not a tweak because you cannot overindulge in something that is part of a weighed portion.

This dish doesn't use all of your allowance B, so you still need to weigh it and use up the remaining on something else.  If you've already used your HE B for the day, or plan using it elsewhere, then yes, it must be counted as usual.

Note, we will only be using 2 tbsp (approximately 13g) for the entire dish.  So, that's 6g of your 40g allowance per person oats.  Then, make sure you're using, say your remaining 36g of oats in porridge.  I'm sure you get the idea.

Storing Stew

If you have plenty of leftovers, then you can store them in a freezable container for up to one month.

Full defrost is in the frigge and heat through thoroughly before consuming.

If leaving in the fridge, then I usually keep for up to a week and heat through on the hob or microwave in a microwavable container.

Serves 2 or 4 People

If you're big eaters like us, then we cook this for just the two of us.  But it's so delicious that sometimes I double up on the ingredients.

This is great for saving time and cooking in batches.

But what makes it so incredibly delicious is the sweet red pepper, slow cooked and oozes in to the juices.  It's proper comfort food which I don't think you'll be disappointed with.

Slow Cooker, Hob, Oven or Instant Pot

I only seem to have times for my slow cooker these days.  Now if you want something hands free but shorten the cooking time, you can cook it on low for 6-7 hours, or high for 3-4.

For large cast iron dishes, then it's perfect over the hob or in the oven.  Similar to the slow cooker times, you can cook with the lid on directly over heat on a simmer for 2 hours, 30.  Just make sure you stir occasionally to ensure it's not catching; if not, you may need to add a touch more water.

For ovens, I usually cook stews in lidded cast iron or casserole dishes at 160 degrees, again, for two to three hours for a slow, low bake.

Instant Pot Beef Stew

I have since cooked beef stew in the Instant Pot , which you can see here. In a nutshell, sear your meat if you have time, then add everything to the pot and select "meat stew", which takes 35 minutes.

Unofficial Slimming World Slow Cooker Beef Stew

This unofficial Slimming World beef stew oozes rich soothing flavours.

  • Frylight
  • 400 g lean diced beef
  • 2 onions peeled & diced
  • 1 celery stick diced
  • 2 carrots peeled & sliced in to chunks
  • 1 tbsp tomato puree
  • 1 red pepper deseeded & chopped
  • 2 tsp oregano
  • 1 tsp balsamic vinegar
  • 2 beef stock cubes
  • 400 ml water
  • 2 tbsp rolled porridge oats (13 grams) *to be counted or used as your allowance
  • Seasoning
  • 300 g Baby new potatoes steamed& halved
  • Spray a large frying pan with frylight and sear the meat on both sides then transfer to your slow cooker.

  • Now transfer everything else to the slow cooker, cover with lid and set on low for 6-7 hours or high for 3-4.

  • Once cooked, add the steamed and halved new potatoes and stir well.

  • Season again if needed and serve.
